Observed staff place recently prepaered beef kabobs in walk in cooler covered tightly not allowing quick cooling to 41*F. Prepared or portioned foods must be cooled to 41*F within two hours. When cooling loosely cover until food reaches 41*F and then cover. Corrective Action: Correct prior to next routine inspection.
