Inspector's notes
Observed an ice machine in use with black organic matter built up along the interior wall and deflector panel. Per PIC the ice produced by the machine was used for customer drinks at the soda fountain at the front of the store. Educated PIC that due to organic matter build up, the ice machine must be drained and cleaned in place. Educated PIC on clean-in-place procedure using hot water and soap, then a hot water rinse, and then a hot water rinse and sanitizer. PIC stated he would have the night shift employee drain the machine and wash in place. Correct prior to next routine inspection.
