Inspector's notes

Observed 49°F-54°F internal temperature range, per probe thermometer, of raw bacon, raw ground beef, raw shelled eggs, raw chicken, pulled pork, queso sauce, marinara, sour cream, buttermilk, cheesecake, shredded cheese, and sliced cheese inside walk-in cooler at back of kitchen. Person in charge (PIC) stated last confirmed 41°F temperature check of walk-in cooler was night prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods shall be maintained at 41°F or below. All TCS foods (see embargo list) improperly cold held were recommended for discard at time of inspection. PIC removed TCS foods improperly cold held from premises at time of inspection. Corrective Action: Corrected at time of inspection.

Walk-in freezer located inside walk-in cooler space. Establishment propped open walk-in freezer door such that the walk-in cooler maintains 41°F. Establishment shall repair prep cooler such that it maintains TCS foods at 41°F or below prior to re-inspection on 6/9/26. Corrective Action: Correct prior to re-inspection.
