Observed small refrigerator unit underneath service window measuring at an internal temperature of 48-55°F of all TCS Food items. All TCS food items were placed inside small unit around 1 hour before inspection. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Time and temperature controlled for safety foods inside of the refrigerator such as cream cheese and ranch cups had internal temperatures as measured using a probe thermometer of 41°F or below.

In discussion with the person in charge, the refrigerator is being repaired and the technician is waiting on some parts to arrive to fix the refrigerator. No time and temperature controlled for safety foods were in the refrigerator at time of inspection. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. A re-inspection will occur within 10 days or no later than August 21st, 2025. PRIORITY VIOLATION-7-204.11, P: Sanitizers, Criteria-Chemicals Observed quat sanitizer concentration levels over 400 ppm as indicated by the testing strips. PIC stated that the sanitizer is prepared directly in the sanitizer bucket. Instructed PIC to remake sanitizer in the 3-compartment sink as that is easier to control than in the sanitizer bucket. PIC can then refill the bucket from the sink as needed. After PIC remade the sanitizer in the 3-compartment sink, sanitizer was tested again using test strips and was within the appropriate range of 150-400 ppm for the quat based sanitizer. Please ensure that staff are regularly using test strips to verify sanitizer levels are within the appropriate range. Correct By: Corrected At Time Of Inspection
