Observed organic matter on the inside of the bar gun beverage dispenser nozzle at the bar. Person in charge removed the nozzle in question to be washed, rinsed and sanitized at time of inspection. Inspector's notes

Observed a metal container of cubed tofu sitting on top of ice in an ice well on the prep line in the kitchen. The internal temperature of the chopped tofu as measured using a probe thermometer was at 52°F. According to the person in charge, the tofu had been in that well for more than 4 hours. The container of cubed tofu was embargoed at time of inspection (see embargo form). It was observed that the container of tofu was sitting directly on top of only ice. Discussed with person in charge to set the container fully into the ice and add water to create an ice bath so that the container of tofu is fully surrounded by an ice bath. Person in charge set up an ice bath. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed a small, covered metal container of cooked scallops that were cooling inside of a small, undercounter refrigerator according to the person in charge. The internal temperature of the scallops as measured using a probe thermometer was holding at 72°F. According to the person in charge, the scallops had been cooked and started cooling within 30 minutes of the inspection. The cooling scallops were taken out of the pan and placed into a wide, flat shallow pan and left uncovered and placed up high inside of the walk-in cooler to finish cooling. Discussed with person in charge that TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.

Observed chlorine concentration levels at the dishwashing machine testing below 50-100 ppm as indicated by the chlorine test strips. Chlorine solution was available but was not properly feeding into the machine. Person in charge (PIC) reached out to a service technician to come and service the dish washing machine. Quaternary sanitizer solution at the 3-compartment sink was tested using quaternary test strips and was within the appropriate range of 150-400 ppm for the quaternary sanitizer solution. Advised PIC to utilize the 3-compartment sink to sanitize their dishes until the dishwashing machine is serviced. Correct By: Corrected At Time Of Inspection
