Establishment contacted their provider and was told they would not be be able to retrieve the past Shellstock tags from past purchases. Shellstock tags must be kept with shellstock until sold, dated with final sale date, and maintained in chronological order for 90 days onsite. Person in charge (PIC) states the deli slicer had not been used and was stored as clean. Also observed the standing meat cutter with food debris on table, blades, and cutters. PIC stated the meat cutter was used the night before and had not been able to clean it. Explained to PIC that all food contact surfaces must cleaned in between different types of raw animal foods; change from raw foods to RTE foods; between used with raw fruits and vegetables and TCS food; before using or storing food temperature measuring device; with a frequency to prevent any contamination. Please make sure all meat slicers and cutters are cleaned thoroughly after use and not left overnight with food debris to prevent hardening and contamination. PIC was able to take apart both cutters and wash, rinse, and sanitize at time of inspection. Correct By: Corrected At Time Of Inspection
