Two door reach-in cooler closest to entrance of kitchen had gallons of milk and salsa (<1lb) measuring an internal temperature between 50-55'F. Per person in charge temperature of cooler has not been verified within past 4 hours. As it was unable to be determined how long TCS items had been out of temperature they were embargoed. Ambient air temperature of cool measured 51.2'F with min/max thermometer. Other working refrigeration nearby for use. Establishment will not hold TCS food in cooler until it is able to hold food at 41'F or lower. Corrective Action: Corrected at time of inspection.
