Observed establishment using quat solution in three compartment sink without any test strips on hand. Had person in charge use approved chlorine sanitizer packets with acceptable chlorine test strips to use in replacement for quat in three bay sink. PRIORITY VIOLATION-7-204.11, P: Sanitizers, Criteria-Chemicals Observed bucket, next to 3-comp sink, with hand rags in chlorine solution, measured above 200 ppm. PIC also tested solution with test strips with the same result. Discussed with PIC the importance of keeping the solution within the appropriate ranges which is 50-100 ppm. PIC then diluted the solution with water and remeasured the solution to the appropriate concentration. Correct By: Corrected At Time Of Inspection
