PRIORITY VIOLATION-3-501.16(A)(2) and (B) - Priority: Time/Temperature Control for Safety Food, Cold Holding. Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per PIC, foods had been at proper holding temperature when monitored within the last two hours. Predefined Comment: All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Hoshizaki refrigeration unit in front counter area had an ambient air temperature of 50*F per inspector's max/min thermometer; unit's temperature reading on outside of unit displayed 48*F. Equipment used to house TCS foods for proper cold holding must hold food temperatures internally at 41*F or below.
