Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Pans of TCS foods set in warmer less than one hour. Predefined Comment: All TCS foods improperly hot held were reheated to 165°F at time of inspection. Heating temperature increased on hot holding table. Monitor internal temperatures at a frequency (i.e. - every 2 hours) to assure prober hot holding temperatures. Corrective Action: Corrected at time of inspection.
