Inspector's notes

Observed the following food items cold holding at internal temperature of 49-63 deg F in a reach in unit that was holding at >41 deg F by the hot holding table. Diced cabbage, sour cream and green salsa. Manager informed the food items had been placed in unit earlier in morning and discarded food items. The reach in unit returned to within temperature specification during inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed cooked potatoes with an internal temperature range of 45F-49F on a rack in the walk-in cooler. Per PIC, potatoes was cooked, placed in the walk-in cooler the day prior to inspection, and had not been removed from walk-in cooler. All TCS foods improperly cooled were discarded by PIC at time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrective Action: Corrected at time of inspection.
