Butter, whipped cream, milk, yogurt, and cream cheese-47-68F in the homestyle reach in cooler. PIC stated that milk, butter, and whipped cream had been in the unit for an extended amount of time and discarded-see embargo form. PIC stated that yogurt and cream cheese were placed into the unit less than 2 hours prior and relocated the walk in cooler in the main kitchen. Keep PHF/TCS foods in cold holding at 41F or below. ***Ambient temperature of the reach in cooler was 47-48F. The PIC called to have maintenance done and the unit was adjusted to 40F. Corrective Action: Corrected at time of inspection.

Kitchen only has a homestyle refrigerator that is being used to store PHF/TCS foods (Milk, whipped cream, yogurt items, and butter). Per final construction report, all refrigerators and equipment must be commercial grade. Ensure that the unit is replaced with a NSF (ANSI) approved commercial unit. Corrective Action: Correct prior to next routine inspection.

Observed 0 ppm chlorine sanitizer in the dish machine being used. Observed sanitizer not being fed into the machine. Notified person in charge and they put an out of order sign on the machine and removed the dishes in the machine and had employee bring to the main kitchen to be washed, rinsed, and sanitized. Employees will bring dirty dishes to the main kitchen to be washed, rinsed, and sanitized until the dish machine is measuring 50-100 ppm for chlorine. Person in charge put in a work order. Corrective Action: Corrected at time of inspection.
