Inspector's notes

Observed 1/2 gallons of milk, half-n-half, and other dairy products located in a reach-in refrigerator near the customer window registering internal temperatures between 47°F-49°F. The dairy products were located in a reach-in refrigerator measuring an ambient air temperature of 54°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per manager, the dairy products had only been in the reach-in refrigerator for approximately an hour. The manager removed the dairy products and placed them in the walk-in refrigerator to rapidly cool to 41°F. The reach-in refrigerator shall not be used to store perishable food items including dairy products until repairs are made. Corrective Action: Corrected at time of inspection. *2nd repeat violation

Observed jugs of dairy milk, half-and-half, and milkshake base with internal temperatures ranging from 52-56 degrees Fahrenheit in reach-in refrigerator. Ensure time-and-temperature control for safety (TCS) foods are kept cold at 41F or lower. Items were stored in reach-in refrigerator that was holding at an ambient temperature of 55F during the inspection using min-max thermometer. Per person in charge (PIC), opened containers were placed in unit less than 4 hours prior to inspection and unopened containers were placed in unit less than 1 hour prior to inspection. PIC moved milk, half-and-half, and milkshake base to alternate reach-in refrigerator and to walk-in refrigerator to cool rapidly. Inspector verified temperatures during inspection. Unit may not be used to store TCS foods until repairs are completed. PIC called in work order during the inspection. Establishment has sufficient refrigeration for remaining TCS items.
