Inspector's notes

Observed pastries with cream cheese frosting & pastries with ham and cheese sitting in room temperature in the display case and in a rack in the kitchen. Internal temperature is in the range from 70-74*F. Person in charge (PIC) stated those pastries were delivered in the morning around 6:30am and have been sitting in room temperature since then. PIC stated those pastries are sometimes put on time as a control, but no time stamps were available at time of inspection. PIC placed those pastries in the display cooler at time of inspection to rapidly cool to 41*F or below, since it has been less than 4 hours that they had been sitting in room temperature. Corrective Action: Corrected at time of inspection.

Observed quiche in the reach-in cooler with a date that corresponds to the date the shell was made. Informed person in charge (PIC) that date marking should correspond to when the quiche filling was baked, since that is considered a TCS item and the shell is not. PIC stated the quiche was baked yesterday and date marked the items at time of inspection. Informed PIC that TCS products should either be used or discarded within 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.
