Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per PIC, foods in unit had not been monitored for temperature control. TCS food in unit were embargoed. Predefined Comment: All TCS foods improperly cold held were marked for discarded at time of inspection. Corrective Action: Corrected at time of inspection. ____________Do not use unit to house TCS foods until unit can maintain foods at an internal temperature of 41*F or below.
