Observed crushed tomatoes in hot holding unit at a temperature of 130*F at time of inspection. Person in charge explained he began reheating tomatoes 2.5 hours prior to temperatures being taken. TCS food reheated to 165°F for 15 seconds and shall be done rapidly (does not exceed 2 hours). RTE food taken from commercially processed, hermetically sealed container, or from food processing plant shall be heated to 135°F for hot holding and hold at 135*F after reheating procedures have taken place.
