Observed high temperature warewashing machine sanitizing with hot water at 139.1 degrees F. When food-contact surfaces are being sanitized with hot water in a dish machine, the surface temperature must reach at least 160°F as measured by an irreversible registering temperature measuring device to destroy pathogens that may remain on such surfaces after cleaning. Person in charge (PIC) will discontinue using warewashing machine for sanitizing until it is repaired and will use the 3 compartment sink for sanitizing. In the walk in cooler, observed homemade bearnaise sauce with a date mark of 08-17. In the reach in cooler to the right of hot holding, observed small container of cooked apples with date mark 08-07, a medium plastic container of corn sauce with date mark of 08-17, and a small plastic container of bechamel sauce with date mark 08-17. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed a glass of soda on a cutting board at a food prep station in the kitchen. There was no lid or straw. Discussed with employees that a straw and lid are needed to reduce risk of contamination and that employee drinks need to be in a designated area. Employee moved drink at time of inspection. To ensure food safety, prevent physical contamination and the transmission of disease; employee eating, drinking, beverage storage, and using tobacco must be done in an approved area. PIC moved employee consumables to the designated area and will retrain on proper eating, drinking, and tobacco use. Corrective Action: Corrected at time of inspection.
