Inspector's notes

Observed cooked pinto beans with an internal temperature range of 45F-47F, and pico de gallo with an internal temperature range 47F-50F of on rack in walk-in cooler. Per PIC, pinto beans were cooked, and then placed in the walk-in to cool. The pico de gallo was cut from some ambient temperature vegetables, and then also placed in walk-in to cool. The food items were made on the day prior to inspection, and had not been removed from walk-in cooler. All TCS foods improperly cooled were discarded by PIC at time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed cooked rolled tacos filled with meat near the fryer with an internal temperature of 90F. Per PIC, the rolled tacos are under time as a control, but did not have a time stamp or a written procedure. PIC states the cooked roll tacos were out of the fryer for less than 2 hours. All TCS foods being held under time as a control were properly time stamped at time of inspection. Must provide written time as a control procedures prior to re-inspection. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. Corrective Action: Correct prior to re-inspection on 6/22/2026.
