Observed no paper towels at the hand wash sink located at the bar. Per PIC, the establishment is currently out of the paper towels used at the bar. Had PIC provide napkins at the hand wash sink until the shipment of paper towels come into the establishment. Each handwashing sink must be provided with hand drying provisions at all times. Corrective Action: Corrected at time of inspection.

#16 — Food-Contact Surfaces: Cleaned and SanitizedPriority4-501.114

Inspector's notes

Observed bar dish machine with a sanitizer concentration of 0ppm for chlorine. After checking the bottle for the sanitizer and priming the machine, the dish machine still did not have a proper concentration for chlorine. The establishment will be utilizing the dish machine in the kitchen until the bar machine can be serviced and repaired. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Instructed PIC re-wash any dishes that were ran through the dish machine on the day of the inspection. Chlorine must have a concentration between 50-100 ppm for sanitizing food contact surfaces. Corrective Action: Corrected at time of inspection.

Observed an open packaged of hot dogs located in the chef table under the grill without a date mark. Also observed house made salsa located in the walk-in cooler without a date mark. All RTE/TCS foods were properly date marked at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.

Observed no raw beef and pork stored above ready-to-eat vegetables, and cooked chicken wings located in the walk-in cooler. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.
