Thermometer was calibrated on site. Per person in charge (PIC), they stocked the unit an hour prior. These items were all removed and placed in the walk-in refrigerator to facilitate rapid cooling. Ambient air temperature of the refrigerator measured 57°F per min/max thermometer. Repair technician arrived while on site and fixed the unit, measuring 38°F by the end of the inspection. Reviewed cold holding requirements with the PIC. Correct By: Corrected At Time Of Inspection
