Inspector's notes

Observed coolers on cook line with an ambient temperature of 54*F and 59*F. The coolers contained miscellaneous items including raw shrimp, raw burger patties, raw chicken portions, raw steak portions, cheese, and tomatoes. Chef stated that the products had been placed in the coolers 2 hours prior to inspection. Chef had staff remove product from the bottom and move to walk-in cooler. Chef had staff ice both the top and bottom of the product on the top at time of inspection. Chef called for service at time of inspection. Discussed with Chef that all TCS items should be maintained at 41*F or below when cold holding. Corrective Action: Corrected at time of inspection.

General Manager of the establishment called and informed the department of a small hood fire that occurred in the back pastry area of the main kitchen. Inspector stopped by to verify that the establishment is okay to reopen. Observed the area affected by the fire fully enclosed and tarped off. No risk of contamination was observed. The area affected was exclusively used for pastries and baked goods. Establishment will limit pasty menu to not overwhelm the kitchen. An investigation is underway to determine if a new hood system is needed. Discussed a possible remodel once the investigation has been completed.No county legal action will result from this inspection.
