Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. According to the PIC all TCS foods were held above 41°F for about 1.5 hours. Predefined Comment: All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Discussed maintaining lids on units, utilizing ice baths, and pre-chilling products in the walk in refrigerator to 41°F before placing in the prep unit if left out when portioning.
