No County legal action will result from this inspection.The establishment is currently offering pasta mixed and served inside a Grana Padano cheese wheel. Per kitchen manager, this offering is available from 4pm-9pm on Friday and Saturday during the months of December through April. Per manager, the cheese wheel is scraped clean of any food residue or moisture between each order/use. The wheel is stored in the walk-in refrigerator when not in active use. Observed the cheese wheel being stored in a polyethylene can liner inside the walk-in refrigerator at the time of inspection. Observed moisture along the interior of the liner and on the surface of the cheese wheel. Instructed the kitchen manager to remove the cheese wheel from the can liner and store inside the walk-in in a manner that prevents contamination from shelves above the wheel and helps to facilitate better air flow to prevent the accumulation of moisture. *The establishment may be required to apply for a variance in the future.
