Inspector's notes
Observed mechanical dishwasher, actively being used, using a chlorine based sanitizer measuring less than 50ppm of sanitizer at the food contact surface. The establishment attempted to prime the dishwasher, but was not able to achieve a proper concentration. Per manager, the dishwasher technician was just at the location the day prior servicing the unit. The establishment shall wash, rinse, and sanitize all food contact surfaces at a concentration between 50-100ppm to adequately sanitize the food contact surfaces of any pathogens. The manager contacted their mechanical dishwasher provider and scheduled repair services for the same day as inspection. The establishment shall use their 3-compartment sink to wash, rinse, and sanitize all food contact surfaces until repairs have been made. Corrective Action: Corrected at time of inspection.
