PIC labeled the working chemical bottles with common name of cleaner.

Ambient temperature of top of the prep table 47*F and the bottom part of prep table at 45*F. Discussed with person in charge (PIC) the tzatziki sauce was portioned at 12pm and the time was 4:15pm. Embargoed the portioned tzatziki sauce for being above 41*F for more than 4 hours. Discussed with PIC all Temperature Controlled for Safety (TCS) foods must be at 41*F or less. Other items of swiss cheese, feta cheese, garlic and oil sauce, ranch were at temperatures of 44*F to 45* but were put in the prep table approximately 3pm. The swiss cheese, feta cheese, garlic and oil sauce and ranch were relocated to reach-in to rapid cool. Discussed with PIC to put in a work order for the prep table and to not use it for TCS items until the prep table is fixed. Correct By: Corrected At Time Of Inspection
