Observed tray of raw chicken wings measuring 46F-56F, pico de gallo with tomatoes measuring 50F, and beer cheese measuring 47F in reach in cooler next back door. All measurements read with probe thermometer. Reach in cooler ambient temperature measures 47F. PIC reports all items were held in this cooler overnight. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
