During inspection observed the following reduced oxygen packaged (ROP) products frozen in the freezer: Foie Gras Duck, Chicken Confort, Raw Lamb, Chicken Bones. Informed the owner to ensure that an approved variance for ROP from MCESD is obtained or that items in an ROP are maintained for no longer than 48 hours. Items were removed from the ROP packaging and placed under refrigeration to thaw, by the person in charge at the time of inspection. Please ensure to have approval from MCESD prior to conducting a process that requires a variance, such as Reduced Oxygen Packaging, longer than 48 hours. Corrective Action: Corrected at time of inspection.
