Observed mechanical low-temp dish machine actively in-use and dispensing chlorine sanitizer at a concentration of 0PPM at time of inspection. Food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. PIC will discontinue use of mechanical dish machine and instead use the 3-comp sink for warewashing activities until repairs are made. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed shredded lettuce, shredded cheddar, shredded mozzarella, whole raw shelled eggs, hermetically sealed scrambled eggs, and butter in single door reach in (cooler #2), holding an internal temperature ranging 43-48*F. Person in charge stated whole shell raw eggs were for personal use, hermetically sealed eggs were placed in unit from frozen within 6 hours prior to inspection. Hermetically sealed eggs were placed in walk-in. Remaining food items were placed in unit over 24 hours prior to inspection and were discarded. PRIORITY VIOLATION-3-501.16(A)(2) and (B) - Priority: Time/Temperature Control for Safety Food, Cold Holding.
