Inspector's notes

Observed cooling queso in deep containers with lids in the walkin. Manager said it had been there 1 hour. Product at 80F on the outside, and 130F on the inside. Manager transferred to much smaller containers with no lid and immediately down to 75F during inspection. Talked to staff about cooling methods. Ensure foods are cooled from 135F to 70F within 2 hours, and down to 41F within 6 hours total. Ensure no lid, small/shallow containers and a scoop to stir and move the product around. Corrective Action: Corrected at time of inspection.
