Observed deep container of marinara sauce at 90F inside the walkin. As per manager, the product had been cooling for 1.5 hours. Manager switched it to a shallow pan, in ice, and put a utensil in to move the product around, at 70F after 2 hours. Talked to manager about cooling techniques. Ensure that cooled foods get below 70F within 2 hours, and below 41F within 6 hours total. Corrective Action: Corrected at time of inspection.
