Discussed that the consumer advisory disclosure method is not needed on the items that are only offered fully cooked to temperature (burgers/salmon). Remove the disclosure method when menus are reprinted. 2. Discussed with PIC that butter is TCS and therefore must be held at 41*F or below or 135*F or above. If it is needed to be soft, it can be held on time as a control, where after four hours it is either fully used or discarded. Explained to PIC that time as a control needs a written policy and time stamps. 3. Discussed with PIC that contact time for all food contact surfaces sanitized in quat is 30 seconds and they must all be airdried. Suggested PIC review contact time with the employees.
