Observed containers of cooked country gravy actively cooling in the walk in refrigerator. Internal temperatures were ranging from 71F-81F. Per PIC and cooling log, the items entered the cooling process at 9:35AM at 135F. At 1PM, 3.5 later, the items had not reached below 70F. PIC discarded items at time of inspection. Discussed with PIC to ensure staff are stirring periodically to facilitate rapid cooling. Corrective Action: Corrected at time of inspection.

-- In walk-in refrigerator, unopened case of raw sirloin beef steaks were stored above ready-to-eat turkey, ham steaks, and pot roast. No visible contamination observed. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Liquid egg, diced ham, cooked corn, and other TCS food items in prep cooler with internal temperatures of 44-50*F. The ambient temperature of the cooler was 44-46*F. PIC stated the items were stocked into the cooler either within the last 20 minutes (for the colder stuff) or about 3 hours and 40 minutes ago. TCS food items were moved to another cooler for cooling and continued cold holding. The cooler will not be used for cold holding TCS food items until it is able to maintain an ambient temperature of 41*F or below. Observed the top sliding door for four prep tables (three on the cooking line, one across from the service window) to be broken or otherwise in disrepair. Top door is not easily secured in place, in multiple cases the hinge used to lock the top door in place was unfastened or missing. All TCS food product being stored within were at or below 41'F at time of inspection. Discussed maintaining all equipment in good repair with PIC. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. The deli turkey was the only item in the cooler that was above 41*F. PIC stated the turkey was not left out and was moved directly from the walk-in to the prep cooler. The ambient temperature of both coolers were 41*F or below. The turkey was in the corner and may have airflow issues. PIC will continue to monitor the area where the turkey was. Sliced tomato, cantaloupe, and other TCS food items in salad prep cooler found with internal temperatures of 47-48*F. PIC stated the cooler was stocked at 5:00 AM and last checked at 7:00 AM. PIC moved the TCS food items to the walk-in freezer for rapid cooling and will discard the items if they are not at 41*F or below prior to 9:30 AM. The ambient temperature of the cooler was also 47*F. The cooler will not be used for cold holding until it is repaired/replaced and able to maintain an ambient temperature of 41*F or below.
