All TCS food items were date marked at time of inspection. Discussed with PIC that all TCS commercially packaged foods must be date marked once opened. Discussed with PIC labeling products that were frozen with the first day prepared and thaw pull date. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Observed three containers of french toast soak made with raw eggs stored above open pancake batter made without egg in the reach in refrigerator. Informed PIC that the french soak contains raw egg and needs to be stored on the below the batters to avoid cross contamination. PIC properly stored these items at time of inspection to prevent cross contamination. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. #22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed TCS food products with internal temperatures ranging 48*-50*F in the reach in refrigerator at the front of the establishment. These items included milk, half & half, heavy cream, and butter. The ambient air temperature of the unit was 50.5*F, measured using min/max thermometer. PIC informed that these products had been left in the fridge overnight. Informed PIC that these items need to be discarded. PIC discarded the improperly cold held items at time of inspection. Items were embargoed. Informed PIC that the unit cannot be used for TCS products until it was capable of holding them at 41*F or below. PIC agreed to not use the unit for TCS products until it is fixed. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
