Inspector's notes

Observed leafy greens, arugula, diced tomatoes, and provolone cheese with an internal temperature of 46*F in top section of reach in cooler in deli area. Equipment was holding ambient temperature of 38*f at time of inspection. It was determined a spot was left empty directly in front of the fan allowing all the cold air to escape and preventing good air flow. PIC placed an empty container in empty spot to help manage air flow. Corrective Action: Corrected at time of inspection.

Observed boscolla, tomatoe sauce, dolce vita sauce, 4 cheese sauce, grilled red peppers, pesto sauce with an internal temperature of 53*F cooling in top section of reach-in cooler in 4 inch containers covered with lids. PIC stated foods had been cooling for 4.5 hours prior to inspection and were moved to freezer to rapidly chill. Provided cooling guidance documents and discussed cooling methods. Reach-in cooler was holding ambient air temperature of 41*F at time of inspection and also discussed keeping any open spots with empty plastic containers to maintain good air flow in equipment. Corrective Action: Corrected at time of inspection.
