Predefined Comment: Employee properly washed hands at handwash sink at time of inspection. Predefined Comment: Discussed the importance of proper hand washing procedures with the person-in-charge (PIC). Proper handwashing procedure is to rinse hands with warm water, scrub with soap for 10-15 seconds, rinse with warm water, dry with approved drying provision, and turn off in a manner to prevent re-contamination of hands. Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of pathogens and contamination. Corrective Action: Corrected at time of inspection.

Chicken was put back into the fryer and reached a minimum of 165°F or above. Cooking temperatures for several batches of various types of chicken were taked after cooking, and all reached a minimum of 165F. Corrective Action: Corrected at time of inspection.

Observed fries cooling at room temperature with an internal temperature of 80*F. Fries were not labeled at time of inspection. According to PIC, the fries had been out for Approximately 1.5 hours. The person in charge was instructed to move the fries into the walk-in cooler to rapidly chill. Discussed approved cooling methods, once blanched fries reach a minimum temperature of 135*F they must be cooled using and approved cooling method. Approved cooling methods must be uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means.

Inspector's notes

Cooked corn was observed at 46F-52F at the top of the front reach-in cooler. It was moved to the walk-in cooler to cool. Per the manager, the corn was at the correct temperature earlier in the day. Foods inside the cooler were at 43F and the unit at 42F. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.
