Inspector's notes

Observed gallons of milk, and packages of butter stored in fridge unit with an ambient temperature of 65F. Observed butter with an internal temperature of 47F. PIC stated that milk and butter were stocked in the unit two hours prior. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Informed PIC that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Facility has adequate amount of cooling/cold holding units. Corrective Action: Corrected at time of inspection.
