Observed clean pans stacked while still wet. Food-contact surfaces must be allowed to air-dry completely before being stacked or stored to prevent potential contamination and bacterial growth. Person in charge (PIC) was advised of the proper procedure for washing, rinsing, sanitizing, and allowing utensils and equipment to completely air-dry before stacking. Corrected at time of inspection.

Observed cooked chicken breast on countertop holding at 115*F, according to employee, the chicken is used for donations and will be moved to the refrigerator once it is cooled down. According to the time stamp, the chicken had been out for about 35 minutes. Instructed employee to move chicken into the walk-in due to chicken being in the active cooling process. Discussed cooling procedures at the time of inspection. Corrective Action: Corrected at time of inspection.
