Inspector's notes

Observed one handwash sink in back bar and one handwash sink in front bar have dump trays resting inside each sink. Per person-in-charge (PIC), sinks in the bar areas were used as both dump and handwash sinks. Handwash sinks must be maintained so accessible at all times and may not be used for purposes other than handwashing. PIC removed dump trays from sinks designated as handwash sinks at time of inspection. PIC stated will discontinue use of handwash sink for all activities that are not for handwashing. Corrective Action: Corrected at time of inspection. 6-301.14 - Core: Handwashing Signage. Observed sanitizer sink in three-compartment sink at back bar have a concentration of 500ppm quaternary ammonia with active warewashing occurring. PIC emptied sink and added sanitizer with concentration of 200ppm quaternary ammonia at time of inspection. PIC relocated food contact surfaces to be washed, rinsed, and properly sanitized at time of inspection. Discussed approved use of sanitizers with the person-in-charge (PIC). Sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed multiple TCS food items (cut tomatoes, diced tomatoes, cut lettuce, parmesan cheese, mixed cheese (pepperjack and cheddar), cold cut turkey, cold cut ham, fried egg rolls, dairy whipped cream and chocolate chip cookies with eggs) measured 48-55'F in prep cooler located opposite of cookline. Ambient temperature of unit in question measured at 51.8'F. PIC stated food items were in unit over-night (more than 4 hours ago) and could not confirm when unit in question went out of temperature. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
