#16 — Food-Contact Surfaces: Cleaned and SanitizedPriority4-501.114

Inspector's notes

Observed less than 150ppm quat sanitizer in use at the 3 comp sink. Per PIC, the compartment is filled with 1 part sanitizer from the dispenser and 2-3 parts water. PIC stated they were uncertain which concentration was needed to properly sanitize wares. Per manufactures label, a concentration of 150-400ppm is needed to effectively sanitize food contact surfaces. Food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. PIC refilled the 3 comp sink with sanitizer from the dispenser that was measured between 200-400ppm. Food-contact surfaces were properly sanitized at time of inspection. Advised PIC that if they are diluting the sanitizer to verify with a chemical test strip that the resulting solution is in range for sanitizing. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed double panned plastic containers of cooling chicken in the prep cooler with internal temperatures ranging from 72-94*F when measured with a probe thermometer. Per PIC, the chicken had been cooling for approximately 1 hour. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. All TCS foods being cooled in deep containers were transferred to shallow containers to allow for rapid cooling. Discussed that prep coolers are intended only for holding already cooled TCS foods and are not approved to cool TCS foods. Corrective Action: Corrected at time of inspection.

All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
