Spoke to kitchen manager via phone regarding the use of the Electrolux Thawing Cabinet. Thawing cabinet in kitchen had instructions posted on front door stating the temperature setting can range from 39 to 64 Deg. F, during a Thawing Cycle. Per kitchen manager, the establishment does not allow the Thawing Cycle temperature to exceed 41 Deg. F.Establishment permitted to continue utilizing unit as long as the ambient air temperature remains 41 Deg. F or below. Establishment will contact the department (MCESD) for approval if interested in setting the Thawing Cycle above 41 Deg. PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding: Cesar dressing (49 Deg. F), penal pasta (49-51 Deg. F), and raw country fried steak (46 Deg. F) in top half of respective coolers probed and holding above 41 Deg. F, per probe thermometer. Ambient air temperature of coolers below 41 Deg. F, per min/max thermometer. Top cooler lids open while not actively being used and had gaps where containers could be placed, which could lead to warm air entering cooler. Condensation observed along rims of top half of coolers. Lids will be closed when not in use and container or lids will be placed in empty slots to avoid heat entering cooler. Ensure cold held foods are held at or below 41 Deg. F. Core-3-501.15 (B), C: Cooling Methods; Cooling containers: Cooked pasta in walk-in cooler had been cooling for approximately 4-5 hours while covered with a lid and had an internal temperature of 55 Deg. F, per probe thermometer. Unable to determine approximate time pasta dropped below 135 Deg. F and was voluntarily relocated to freezer for rapid cooling and lids were removed. Ensure cooled foods are left uncovered while actively being cooled in walk-in cooler. Foods actively cooling should go from 135 to 70 Deg. F within the first 4 hours and then from 70 to 41 Deg. F within the next 2 hours, with a total cooling time of 6 hours or less.
