Inspector's notes

Observed cooked pasta in main walk-in cooler in the process of cooling down at 60°F in sealed container with a lid. Per Person in Charge (PIC) cooked pasta was placed in walk-in about an hour prior. All Time/Temperature Control for Safety (TCS) foods cooling were uncovered to allow for rapid cooling. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.

Containers of chicken and tuna salad and cooked cut chicken and cookd gorbanzo beans after being portioned in serving dishes is stored on self service bufet line. Items has to be cool down to 41 degrees F in walk in cooler then store in reach in cooler because reach in cooler can not rapidly cool down the TCS food. Manager transferred all food items that were portion about an hour ago into walk in cooler. Corrective Action: Corrected at time of inspection.
