Internal temperature of 46*F for sliced tomatoes, Tuna 47*F, Turkey 47*F. Per operator items were stored under walk-in refrigeration unit at 41*F or below and placed at display refrigeration early today. Ambient thermometer for display refrigeration unit at 50*F. Operator proceeded to remove TCS food items and lowered temperature in unit. Prior to end of inspection ambient thermometer new reading 32*F at display refrigeration, new internal temperature for tomatoes at 41*F. Corrective Action: Corrected at time of inspection.

Per operator, they prepped roast beef less than 1hour ago and placed it directly on display refrigeration. Ensure to keep any prepared TCS food items in walk-in unit at 41*F or below before placing in refrigerated service line. Operator proceeded to remove roast beef in walk-in refrigeration unit. Walk-in refrigeration verified at 41*F or below. Corrective Action: Corrected at time of inspection.
