#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed yogurt and string cheese with internal temperatures ranging 47*F-51*F stored in the refrigerated reach in unit. The ambient air temperature of the unit was 46.2*F, measured using min/max. PIC stated that the unit was stocked about four hours prior to inspection. Facility does not possess alternate refrigeration, except for freezers. Informed PIC that the yogurt and cheese need to be discarded. All yogurt and cheese were discarded at time of inspection - see embargo form. Discussed with PIC that the unit cannot be used to store TCS foods until it is capable of holding them at 41*F or below. PIC agreed to discontinue TCS food storage in the unit until it is capable of holding them at 41*F or below. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
