#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed cut cantaloupe and honey dew in walk-in with temperatures between 45 to 46*F at time of inspection. Per PIC, all items were cut less than an hour prior to inspection. (see #33). Observed cut fruit cups containing honey dew and cut cantaloupe with temperatures between 47 to 48*F in the display case by the register at time of inspection. Per PIC, fruit cups were placed in the display cooler the day prior to inspection and were voluntarily discarded at time of inspection. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed ambient temperature of the display cooler by the register with a temperature of 49.9*F at time of inspection. Observed display cooler with tcs food items temping at 48*F at time of inspection. Observed walk-in cooler with ambient temperature between 44.1*F at time of inspection and containing tcs food items with temperatures between 45 to 46*F at time of inspection. Establishment has one working reach-in cooler and 2 working freezers able to keep tcs food items below 41*F at time of inspection. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Correct prior to re-inspection on 9/29.

Per employee, items were prepped 4 hours prior to start of inspection. Discussed proper cooling and cooling methods with the PIC. All TCS & RTE items prepared must be cooled from 70-41*F within 4 hours using approved cooling methods (shallow/unstacked/uncovered pans in walk-in cooler or other approved means). PIC ensured all items were uncovered and unstacked to allow for proper cooling at the time of inspection. Correct By: Corrected At Time Of Inspection
