In the cold top prep table next to the pizza oven, observed two small metal containers of cooked sausage, a small metal container of cooked ham, a small metal container of cooked chicken, a small container of pepperoni, a small container of bacon, and a large metal container of marinara sauce with internally probed temperature range of 46-52 degrees F. PIC stated items had been in cold top since last night. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below.
