Observed cook with gloved hands place raw meat into skillet to prepare and then proceed to handle a cooked taco with same gloved hands. Inspector instructed employee to remove gloves, properly wash hands and then proceed to place on new pair of gloves when working with RTE food items. Inspector's notes

Observed the large main reach in unit in the kitchen area holding temperature at 56.00 deg F (according to the min/max thermometer) TCS food items cold holding in unit at temperature of 55-62 deg F included cheddar and mozzarella cheese, cooked shredded chicken and raw chorizo. These items were discarded by PIC. Observed the other single door reach in unit holding temperature at 59 deg F (according to the min/max thermometer) TCS food items cold holding in this unit at a temperature range of 58-69 deg F included cooked carnitas and shrimp, corn bags of mozzarella, raw chicken, and cheddar cheese, hard shelled eggs hot dogs, bacon, French Fries, cooked potatoes, cooked grilled chicken and half and half. These items were discarded during inspection. At this time there are no other available cold holding units in the kitchen area to operate effectively. Additional cold holding units are available in other rooms for storage of TCS foods within temperature range.
