Inspector's notes

Observed TCS items in a cold holding unit on the line range 44*F-50*F including cut tomatoes, shredded lettuce, pickled onion, previously canned olives at the time of inspection. Also observed cut watermelon 52*F at the margarita bar in a double pan with previously frozen water at the time of inspection. Per PIC, cut watermelon is discarded at the end of the day and was taken out at 11am the day of inspection. Per PIC, the TCS food items in the cold table were prepared within the previous 4 hours of the time of inspection and ice was added to the TCS food items to cool back down to 41*F at the time of inspection. PIC voluntarily discarded cut watermelon at the time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed birria consume 55*F-56*F with 3/31 date mark in covered, deep container greater than 4" the walk in cooler at the time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. PIC provided incomplete cooling log from the previous day with final temperature at 4pm recorded as 55*F. Per employee, TCS consume was cooled with an ice wand the previous day until 4pm then ice wand was taken out of product before the cooling process was complete. All TCS foods improperly cooled were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Upon inspection Inspector has noticed there as been no applications submitted for the remodel for tortilla station and barrier exemption for the large outdoor patio opening as discussed during the training inspection on 9/4/25. Please submit these to the department as soon as possible.Discussed when to wash hands between contaminating tasks and handling food.

Observed knives being stored in-between gaps of prep tables in front of house. Additionally observed behind bar ice scoop being stored with handle in contact with ice. Additionally observed behind bar next to handwash sink and next to dishwashing machine spoons and muddlers being stored in water wells with the water turned off. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection. Corrective Action: Corrected at time of inspection.
