Per employee, they use the chemical dispenser at the 3 compartment sink. Chemical dispenser was connected to an empty "simple green" bottle. Establishment has bottles of bleach. Discussed using bleach for sanitizing dishes to a concentration between 50 and 100 ppm. Establishment does have chlorine test strips. Simple green is not an approved food contact surface sanitizer.
