Inspector's notes

Observed dishes in the kitchen warewashing machine with chlorine concentration of 0 ppm. Bucket was about half full. PIC pushed tube down into the concentrate better and primed the machine. After priming, the final concentration was between 50 and 100 ppm. Chlorine concentration shall be between 50 and 100 ppm for sanitizing food contact surfaces. Discussed checking at least once a day. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed the following food items left out at room temperature on trays for service at 55 - 65 Deg. F.: mashed potatoes, fish cake noodles, kimchi, and bean sprouts. Some of the items were placed back in the refrigerator since they were placed out with-in the last hour per the operator. The tray that was at 65 Deg. F. was embargoed. Also observed a container of fish cake noodles, and glass noodles at 66 -70 Deg. F. Embargoed. Spoke to the operator about developing a time as control procedure for these products since this is part of their process to leave out of refrigeration. Provided a guidance document on creating a time as control policy at the time of inspection. Corrective Action: Corrected at time of inspection.
