Per manager, the vegetables are canned in the facility, and a hot brine is used. Discontinue reduced oxygen packaging (ROP) of heat treated vegetables and maintaining the product for more than 48 hours, or obtain a variance from MCESD. Staff indicated they would discontinue canning, and either use maintain the product for 7 days of less when using a hot brine. The manager voluntarily removed the canned vegetables from the establishment. Correct By: Corrected At Time Of Inspection
